Grilled cheese sandwich
This is a lunchtime classic and that is why it has enduring appeal and there are so many variations of the humble grilled cheese sandwich or ‘cheese toastie’ if you will. You’ve got two options with this one you can either pop your cheese sandwich in a grill or cook it on a hot plate pan. The prep for either process is the same and involves the exact same ingredients. Butter your bread on the inside (and outside) and fill it up with sliced cheese.
You can opt to use whatever cheese you fancy. You can’t go wrong with simple cheddar cheese but other popular choices and flavour combinations include:
- Mozzarella cheese with sliced tomato and pesto
- Goats cheese and caramelized onion
- Cheddar cheese with ham or tomato
- Halloumi with sweet chilli sauce and rocket
- Parmesan, Parma ham, olives and spinach
- Feta cheese and roasted vegetables
- Ricotta, tomato and honey
- Gruyere and prosciutto

Macaroni and cheese
How could we compile a list of the ultimate cheese recipes without including this on there? Again, with this recipe, there are so many different variations of what you can do with the humble macaroni cheese. You can add more or less any type of cheese and plenty of other different ingredients to make the mac and cheese of your dreams! We’ll take you through the basic recipe and then list a few other ingredients and things you can add if you want to make your own delectable macaroni dish!
The basic recipe consists of making a thick cheese sauce. You do this by making a standard roux with butter, milk and flour then gradually adding cheese and any other seasonings you like. Cook for 1 min more, then gradually whisk 500 ml of milk until you have a lump-free sauce. Simmer for 5 mins, whisking all the time until thickened. Take off the heat, then stir in the rest of your cheese and any other seasonings. You could add mustard powder, cajun spices, chilli powder, lashing of black pepper – whatever takes your fancy really!
Cheddar is a popular choice for macaroni cheese but you could also add mozzarella or parmesan too! Layer your pasta and cheese sauce into a large oven-proof baking dish then top with more grated cheese and bread crumbs if you want a crisp top. This is the perfect comfort meal and there are lots of tasty variations you can make by adding any of the following or a mixture of the following:
- Crispy bacon bits
- Spicy jalapenos
- Pulled pork
- Sundried or cherry tomatoes
- Olives
- Spinach and kale
- Roasted red peppers
- Sliced chorizo or salami
- Spicy sliced chicken
- Baked cauliflower
You really can’t go far wrong with any of these additions when you have the delicious core recipe of the macaroni cheese!
Mozzarella-stuffed arancini balls
Are you’re not yet familiar with arancini – you will certainly want to be acquainted with it after reading this delicious recipe! These delicious balls are fried after being smothered in breadcrumbs and are filled with risotto rice and mozzarella cheese. You can also add lots of different herbs and spices as well as diced meats and various other ingredients to these. This dish is often served as a starter or entrée with a simple and delicious tomato dipping sauce.
Make your basic risotto recipe with white wine, vegetable stock, shallots and garlic. Sprinkle in some parmesan cheese as well as some diced mozzarella bits. Let the risotto cool when the rice has absorbed the liquid and is cooked through. Roll the risotto mixture into small balls, slightly larger than a golf ball.
For the breadcrumb outer layer mix:
- 150g plain flour
- 3 large eggs, lightly beaten
- 150g fine dried breadcrumbs (panko works well)
Dip each ball into the mixture and set it aside. Once you have coated the balls, half fill a large saucepan with vegetable oil and lower the risotto balls in. you should could each batch for around 8 – 10 minutes. Or cook until golden brown and melted in the centre. Set aside on a tray lined with a clean kitchen towel to absorb any excess oil. Then finally the most enjoyable step! You can tuck into your arancini balls! Enjoy your arancini balls with a fresh, crisp salad and drizzle with a sweet balsamic glaze and a fresh tomato dipping sauce. This is an easy but impressive starter and something that everyone is sure to enjoy!
